Fun Facts about our Sauce
What makes it so yummy?
In short – high quality ingredients!
The Tomatoes: We use a specific type of heirloom Amish tomato grown specifically for us at Willowbrook Farm in Murfreesboro, TN. These are amazing tomatoes – thick and meaty like typical Roma tomatoes but naturally sweeter. These tomatoes allowed us to eliminate all added sugar from the recipe.
The Spices: Specialty spices are from Savory Spice in downtown Franklin. High quality, whole leaf spices and real minced garlic give the sauce more flavor depth than the powders used in most commercial sauces.
Is the sauce gluten-free?
There is no gluten in the tomatoes, paste and spices we use. We use cornstarch as a thickener instead of flour.
What size are the jars?
The sauce is bottled in high-quality, quart canning jars. Each jar is filled with approximately 28 ounces of sauce. This is 4 more ounces of yumminess than you get in a typical commercial jar.
What was the biggest surprise with sauce making?
There were two:
1. How different same variety of tomatoes are from year to year because of weather conditions. We have recipes from each year with slight tweaks to keep the flavors consistent and a journal where we keep notes from each canning year.
2. The number of comments we get about kids LOVING the Fresh Basil sauce. I’ve heard from more than one parent that their kids, who typically don’t care for sauce, go back for seconds (or thirds!). They are amazed and are always asking for more. P.S. – We’ve heard this from a couple adults too.
How long will the sauce last?
It’s so delicious, you’ll want to use it right away! You can always come back for more.
Officially: The USDA recommends consuming acidic canned goods (like pasta sauce) within 18 months. We use new, current year Ball brand lids which now have an 18 month shelf life seal. These lids are also BPA free.
When opening your jar, use a bottle opener. It should be a strong seal and you should hear a noticeable pop when the seal breaks. Don’t forget to store any leftovers in the fridge for up to a week after opening.
Do you accept canning jar donations?
Yes, please! This year we’ve only labeled the lids (which you can throw away). You can return the jars and metal rings to us for re-use in future years. Since the price of jars has almost doubled in the past three years, this helps us keep costs down as well as reuse these high-quality jars for years to come.
We also accept clean, empty pint and quart canning jars (Ball, Kerr). We’ve had a handful of friends pass on their parents or grandparents canning jars. We love being able to share our delicious sauce in previously loved jars.
All returned or donated jars are individually inspected, washed and stored with care. We only accept official canning jars. If you have jars from commercial-made sauce, go ahead and recycle those at your nearest glass recycling center. While they may look like canning jars, they are structurally different and cannot be used in the canning process.
What do you do with the sale proceeds?
All proceeds beyond supply costs are donated to charity. This year $300 (about 60 cents per jar) will go to the Williamson County Library Foundation.
(Supply costs this year, specifically jars, almost doubled from two years ago. Returning the jars will help for next year!)
